Do most wild caught EDB do pretty well on rats and gerbils. I know they eat rabbits in the wild, but wondered if any folks have trouble getting them to switch if caught.

In actuality, the vast majority of wild-caught Eastern Diamondbacks will refuse to eat right up until they die. This is especially true of specimens over 3 feet in length.
However, some keepers have had success getting wild caught Eastern Diamondbacks started on rats and gerbils. Smaller snakes - smaller prey items. Try beige/brown/grey colored mice and rats as white can sometimes put them off.
Good luck. Personally, I would say that you would have much better luck with a captive bred specimen but that doesn't necessarily work for everyone.
