Could anyone point me toward websites or books with information on these snakes? The only thing I've found is information about their toxicity.

Check out "Living Snakes of the World in Color" by John M. Mehrtens. There are 2 full pages on Deinagkistrodon acutus - range, natural history, captive care, etc.
This book is really a herper "must have" in my opinion. There are 2 reviews of this book at the following link:

the definitive book is gloyd/conants "monograph on the genus agkistrodon" its not principally husbandry info but its got a huge amount of data on these snakes

No doubt. That's certainly another "must have", but a higher reading level than "Living Snakes of the World". Mehrtens book is more of a general entry level book with plenty of useful information and an introduction to many species that the average person has never even heard of.
The "Handbook of Clinical Toxicology of Animal Venoms and Poisons" is probably my personal favorite, but definitely not for the average herper. It's probably not even useful for anyone outside of the medical field.
