As provided by 68A-25.002(15), F.A.C., after July 1, 1990, any person or entity not currently
permitted to possess or exhibit venomous reptile species must qualify for a permit by meeting the
following criteria:
(1) Demonstrate no less than one year of substantial, practical experience (to consist of
no less than 1,000 hours) in the care, feeding, handling, and husbandry of the species
for which the permit is sought, or other species within the same biological order,
which are substantially similar in size, characteristics, care and nutritional
requirements to the species for which the permit is sought.
For the purposes of demonstrating compliance, applicants shall submit
documentation of such experience, including: a description of the experience
acquired, the dates the experience was obtained, and the specific location(s) where
acquired, and references of no less than two individuals having personal knowledge
of your stated experience. Personal reference letters do not need to be authored by
venomous reptile permittees. Additional documentation may include records of prior
permits for the keeping of venomous reptiles, employment records, or any other
competent documentation of the requisite experience

To answer two other possible interpretations of your question...
If you're asking the form of the log, we just use a sheet with your name and contact info at the top and columns for the date, time in, time out and a breif description of the work performed. Put down the date and time when you come in and the when you leave, put down the time out. In my case, the description tend to look like "worked with sankes" on the top row followed by ditto marks since I do everything from cleaning to feeding to shows. Being more specific probably won't hurt but it's probably not necessarry unless you do other non-snake wok at the same place.
If you're asking where to do the hours, you'll have to find someone in your area who will let you work with their snakes. I put in my hours at a local wildlife refuge that kept hots. Some people work (possibly for free) for a breeder or importer in their area. You might also find a private keeper who would let you work with his snakes in exchange for getting some free cage cleanings, but that's hard to come by unless you have a good fried with hots because of liability issues. Either way, expect to be asked to sign a release taking full responsibility (including financial) in the case that you are bitten.
